A hearty and satisfying sandwich packed with savory chicken, crispy bacon, creamy avocado, fresh veggies, and tangy mayo. Perfect for lunch or dinner, and easy to customize.

Ingredients

  • Cooked chicken breast (sliced or shredded, grilled or roasted)
  • Bacon slices (cooked until crisp)
  • Avocado (sliced or mashed)
  • Tomato slices (Roma or beefsteak)
  • Lettuce leaves (iceberg, romaine, or butter lettuce)
  • Cheese (cheddar, Swiss, or provolone)
  • Mayonnaise
  • Toast bread (sourdough, whole-grain, or brioche)
  • Salt & Pepper
  • Optional condiments: mustard, sriracha, or chipotle sauce

Instructions

  1. Cook the bacon: Heat a skillet over medium heat. Lay the bacon strips flat and cook for 3-5 minutes per side until crispy. Remove and place on a plate lined with paper towels to drain excess grease.
  2. Toast the bread: While the bacon is cooking, toast your bread slices until golden and crisp. If using a skillet, lightly butter each slice and toast for 2 minutes per side.
  3. Prepare the chicken: If using leftover chicken, warm it slightly in the microwave or skillet. Season with a pinch of salt and pepper for added flavor.
  4. Slice the veggies: Thinly slice the tomato and avocado. If you prefer mashed avocado, scoop it into a bowl, add a squeeze of lemon, and mash with a fork.
  5. Assemble the sandwich: Spread mayonnaise generously on one side of each bread slice. Layer lettuce, tomato, avocado, chicken, bacon, and cheese between two slices of bread. Repeat for additional sandwiches.
  6. Secure and slice: If your sandwich feels tall, use a toothpick to hold it together before slicing it in half diagonally. This makes it easier to eat and looks appealing when served.
