These Oreo graduation cookie pops are quick, easy, and perfect for celebrations. They feature Oreo cookies with a creamy cream cheese filling, dipped in rich chocolate and decorated festively.

  • 20 Oreo cookies (regular or any flavor, Golden Oreos optional)
  • 4 ounces (113 grams) cream cheese, softened
  • 1/2 cup (60 grams) powdered sugar
  • 1 teaspoon vanilla extract
  • 12 ounces (340 grams) semi-sweet or milk chocolate chips or melting wafers
  • Sprinkles or decorations (mini graduation caps, edible glitter, colored sugar sprinkles, nonpareils) – optional
  • Cookie sticks (lollipop sticks or sturdy cake pop sticks)

Instructions

  1. Carefully twist apart 20 Oreo cookies, keeping the cream filling on one half of each cookie. Set the cookie halves aside.
  2. In a mixing bowl, combine the Oreo cream filling with 4 ounces (113 grams) of softened cream cheese. Use an electric mixer on medium speed to blend until smooth, about 2-3 minutes.
  3. Add 1/2 cup (60 grams) powdered sugar and 1 teaspoon vanilla extract, then mix again until creamy and fully combined.
  4. Using a small spoon, spread the cream cheese mixture onto the Oreo cookie halves without filling. Press the other cookie half gently on top to reform the sandwich.
  5. Carefully push a lollipop stick into the side of each cookie sandwich. If the filling feels too soft, chill the cookies in the fridge for about 15 minutes before inserting sticks.
  6. Melt 12 ounces (340 grams) of chocolate chips or melting wafers in 30-second intervals in the microwave, stirring between each until smooth. Alternatively, melt over a double boiler on low heat, stirring constantly to avoid burning.
  7. Hold each cookie pop by the stick and dip it into the melted chocolate, covering the cookie completely or partially, depending on your design choice. Tap off excess chocolate gently.
  8. While the chocolate is still wet, sprinkle mini graduation caps, edible glitter, or colored sugar sprinkles over the chocolate for a festive finish.
  9. Place the dipped pops on a cooling rack or parchment paper. Chill in the refrigerator for at least 20 minutes to let the chocolate harden fully.
  10. Serve within 24 hours or store chilled in an airtight container for up to 3 days.

Notes

If the filling is too soft, chill cookies before inserting sticks. Melt chocolate slowly to avoid graininess. Dipping twice creates a thicker coating but requires extra chilling. Keep pops dry before dipping to prevent chocolate from sliding off. Store in airtight container in fridge up to 3 days or freeze individually wrapped for up to 1 month.
