  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 ½ cups (312g) all-purpose flour

  • 8 oz (227g) cream cheese, softened
  • ½ cup (120ml) heavy cream
  • ½ cup (60g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup raspberries (optional)
  • 1 kiwi, peeled and sliced
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your pizza pan with parchment paper for easy cleanup.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes with an electric mixer.
  3. Add the egg and vanilla extract to the butter mixture, beating until fully incorporated.
  4. Whisk together the flour, baking powder, and salt in a separate bowl. Gradually add this dry mix to the wet ingredients, mixing just until combined.
  5. Press the dough evenly into the prepared pizza pan to about ¼-inch thickness. Poke the dough lightly with a fork to prevent bubbles.
  6. Bake the crust for 15-18 minutes or until the edges are golden brown and the center is set. Remove from oven and let cool completely on a wire rack.
  7. While the crust cools, beat the softened cream cheese until smooth. Slowly add powdered sugar and vanilla, then add heavy cream and whip until fluffy and spreadable.
  8. Spread the frosting evenly over the cooled crust.
  9. Arrange the fruit on top: create star shapes with sliced strawberries, fill spaces with blueberries and raspberries, and add kiwi slices for contrast.
  10. Garnish with fresh mint leaves if desired.
  11. Chill the fruit pizza in the refrigerator for at least 30 minutes before serving.

Ensure butter and cream cheese are softened for best texture. Do not overmix dough to keep crust tender. Cool crust completely before frosting to prevent melting.
