Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease it well.
  2. In a small bowl, mix 1 tablespoon granulated sugar with 1 teaspoon cinnamon for the topping. Set aside.
  3. In a large mixing bowl, whisk together softened butter, brown sugar, and granulated sugar until smooth and creamy. Add the egg and pumpkin puree, then whisk again until well combined.
  4. In a separate bowl, sift together the flour, baking powder, salt, and pumpkin spice.
  5. Gradually fold the dry ingredients into the wet mixture using a spatula. Stir until everything is combined and no streaks of flour remain.
  6. Pour the batter into the prepared pan, spreading it evenly to the edges.
