  • 4 cups fresh broccoli florets (about 300 g)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (optional)
  • 1/4 cup low-sodium soy sauce (60 ml)
  • 2 tablespoons oyster sauce (30 ml)
  • 1 tablespoon brown sugar (12 g)
  • 1 tablespoon cornstarch (8 g) mixed with 2 tablespoons water (30 ml)
  • 2 tablespoons vegetable oil (30 ml)
  • 1 teaspoon sesame oil (5 ml), added at the end (optional)
  • 2 stalks green onions, thinly sliced for garnish
  • A pinch of red pepper flakes (optional)

Instructions

  1. Slice 1 pound of flank steak thinly against the grain into bite-sized strips. Toss the beef slices in 1 tablespoon of cornstarch until evenly coated. Set aside.
  2. In a small bowl, combine 1/4 cup low-sodium soy sauce, 2 tablespoons oyster sauce, 1 tablespoon brown sugar, and a pinch of red pepper flakes if desired. Stir until sugar dissolves. Set aside.
  3. Cut 4 cups of fresh broccoli into bite-sized florets. Mince 3 garlic cloves and grate 1 tablespoon fresh ginger. Thinly slice 2 green onions for garnish.
  4. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add broccoli and stir-fry for 3-4 minutes until bright green and tender-crisp. Remove broccoli and set aside.
  5. Add remaining 1 tablespoon vegetable oil to the pan. Add beef in a single layer and sear without stirring for 1-2 minutes until browned. Stir-fry for another 2-3 minutes until cooked through.
  6. Push beef to one side of the pan. Add minced garlic and grated ginger to the empty space and stir quickly for about 30 seconds until fragrant.
  7. Return broccoli to the pan. Pour in the sauce mixture and stir to combine. Cook for 1-2 minutes until sauce thickens slightly.
  8. Drizzle 1 teaspoon sesame oil over the stir fry and toss gently to finish.
  9. Garnish with sliced green onions and serve hot with steamed rice or noodles.

Notes

Do not overcrowd the pan when cooking beef to avoid steaming. Cook in batches if necessary. Watch broccoli closely to keep it crisp and avoid mushiness. Tossing beef in cornstarch helps create a velvety sauce coating. Sesame oil added at the end enhances aroma and flavor.
