  • 1/4 cup dry white wine or low-sodium chicken broth (60 ml)
  • Juice of 1 medium lemon (about 2 tablespoons)
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese (optional for serving)

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces (225 grams) of angel hair pasta and cook for 2 minutes or until al dente. Drain and set aside, reserving 1/4 cup (60 ml) of pasta water.
  2. While pasta cooks, pat dry 1 pound (450 grams) of peeled and deveined shrimp. Season lightly with salt and pepper.
  3. Heat 2 tablespoons olive oil and 3 tablespoons unsalted butter in a large skillet over medium-high heat. Add minced garlic and red pepper flakes (if using) and stir for 30 seconds until fragrant.
  4. Add shrimp in a single layer and cook for 1.5 to 2 minutes per side until pink and opaque.
  5. Pour in 1/4 cup (60 ml) dry white wine or chicken broth and let simmer for 1-2 minutes, scraping the bottom of the pan to loosen flavorful bits.
  6. Stir in fresh lemon juice (about 2 tablespoons). Add the drained pasta and toss well to coat. If sauce seems dry, add reserved pasta water a little at a time until desired consistency is reached.
  7. Stir in chopped fresh parsley and adjust seasoning with salt and pepper. Sprinkle grated Parmesan cheese over the top if desired before serving.

Use wild-caught shrimp for better flavor and texture. Watch the shrimp carefully to avoid overcooking. Reserve pasta water to adjust sauce consistency. Fresh garlic is preferred for best flavor.
