Refreshing Sparkling Watermelon Mint Agua Fresca Mocktail

A quick and easy sparkling watermelon mocktail with fresh mint and lime, perfect for a refreshing and bubbly drink on warm days.

  • 4 cups seedless watermelon, cubed (about 600 grams)
  • 1012 fresh mint leaves, lightly bruised
  • 2 tablespoons fresh lime juice
  • 2 tablespoons simple syrup (adjust to taste)
  • 2 cups cold sparkling water
  • Ice cubes as needed
  • Optional garnishes: lime slices, extra mint sprigs, thin watermelon wedges

Instructions

  1. Cut 4 cups of seedless watermelon into chunks, discarding the rind.
  2. Place watermelon chunks into a blender or food processor and blend until smooth, about 1-2 minutes.
  3. (Optional) Pour blended watermelon through a fine mesh strainer into a bowl or pitcher, pressing pulp to extract juice for a smooth texture.
  4. Lightly bruise 10-12 fresh mint leaves by gently crushing them in your hand to release oils without bitterness.
  5. Add bruised mint leaves, 2 tablespoons fresh lime juice, and 2 tablespoons simple syrup to the watermelon juice. Stir gently to combine and adjust sweetness if needed.
  6. Refrigerate the mixture for 15-20 minutes to allow flavors to infuse.
  7. Just before serving, add 2 cups of well-chilled sparkling water and stir gently to preserve bubbles.
  8. Serve over ice cubes in glasses and garnish with mint sprigs, lime wheels, or watermelon wedges.

Notes

Use ripe, seedless watermelon for best natural sweetness. Bruise mint leaves gently to avoid bitterness. Add sparkling water last and stir gently to keep bubbles. Prepare watermelon juice base up to 24 hours ahead and add sparkling water just before serving. Frozen watermelon can be used if thawed and drained. Simple syrup can be substituted with honey or agave for a different flavor or stevia for low sugar.
