A quick and easy watermelon feta salad with fresh mint, perfect for summer gatherings. This salad combines juicy watermelon, tangy feta, and bright mint for a refreshing and flavorful dish.

  • 4 cups seedless watermelon, cut into bite-sized cubes
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped or torn
  • 1/4 cup red onion, thinly sliced (optional)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey or agave syrup
  • Salt and pepper to taste

Instructions

  1. Cut a seedless watermelon into bite-sized cubes, about 4 cups (roughly 600 grams). Remove any rind bits.
  2. Thinly slice 1/4 cup (about 30 grams) of red onion. If desired, soak the slices in cold water for 5 minutes, then drain to mellow the flavor.
  3. Rinse and pat dry about 1/4 cup (10 grams) of fresh mint leaves. Tear or roughly chop them.
  4. In a small bowl, whisk together 2 tablespoons (30 ml) extra virgin olive oil, 1 tablespoon (15 ml) fresh lime juice, and 1 teaspoon (5 ml) honey or agave syrup. Season with a pinch of salt and freshly ground black pepper.
  5. In a large mixing bowl, gently combine the watermelon cubes, crumbled feta, sliced red onion, and fresh mint.
  6. Pour the dressing over the salad and gently toss to coat all ingredients evenly without mashing the watermelon.
  7. Taste and adjust salt and pepper if needed.
  8. Refrigerate the salad for 10-15 minutes before serving to let the flavors meld and keep it cool.

Notes

Use fresh mint leaves for best flavor. Toss salad gently to avoid mashing watermelon. Prepare close to serving time to keep salad crisp. For dairy-free, substitute feta with crumbled tofu or omit. Soak red onion slices if raw onion is too pungent.
