Instructions

  1. Cook the bacon: Place 6 slices of bacon in a cold skillet, then turn heat to medium. Cook until crisp, about 8-10 minutes, turning occasionally. Transfer to paper towels to drain and cool. Slice each piece in half lengthwise.
  2. Prepare the special sauce: In a small mixing bowl, combine 1/4 cup mayonnaise, 2 tablespoons ketchup, 2 tablespoons yellow mustard, 1 tablespoon pickle relish, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder. Stir well until smooth. Refrigerate until assembly.
  3. Form the beef patties: Divide ground beef into 6 equal portions (about 3 ounces or 85 grams each). Shape into thin patties slightly larger than slider buns. Season both sides with salt and pepper.
  4. Cook the patties: Heat a large skillet or grill pan over medium-high heat. Cook patties about 3 minutes per side for medium doneness. During the last minute, place a slice of cheddar cheese on each patty and cover with lid or foil to melt cheese.
  5. Prepare the rolls: Slice the 12 Hawaiian rolls horizontally but keep them connected on a baking sheet. Brush tops with 2 tablespoons melted butter.
