Savory Brown Butter Ribeye Recipe with Easy Roasted Garlic Mashed Potatoes

  • 2 boneless ribeye steaks, about 10-12 oz (280340 g) each, preferably well-marbled
  • 6 tablespoons (85 g) unsalted butter
  • 2 whole garlic bulbs, separated into cloves and peeled
  • 3 large russet potatoes (around 2 lbs or 900 g), peeled and chopped
  • ½ cup (120 ml) heavy cream, warmed
  • ¼ cup (60 ml) sour cream (optional but recommended)
  • Salt and freshly ground black pepper, to taste
  • A few sprigs fresh thyme (optional, for garnish)
  • 1 tablespoon (15 ml) olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Toss peeled garlic cloves with olive oil and a pinch of salt. Spread on a baking sheet and roast for 25-30 minutes until soft and golden, stirring once halfway through. Set aside to cool.
  2. Peel and chop russet potatoes into roughly 1-inch cubes. Place in a pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook for 15-20 minutes until fork-tender.
  3. While potatoes cook, melt butter in a cast iron skillet over medium heat. Stir occasionally as it foams and turns golden brown with nutty aroma (about 5 minutes). Remove from heat once browned and set aside.
  4. Pat ribeye steaks dry and season generously with salt and pepper. Heat skillet over medium-high heat until shimmering. Sear steaks for 4-5 minutes per side for medium-rare (internal temp 130-135°F / 54-57°C). Spoon browned butter over steaks occasionally. Sear edges briefly if thick. Rest steaks for 5 minutes before slicing.
  5. Drain potatoes and return to pot off heat. Add roasted garlic cloves (squeezed out of skins), warm heavy cream, sour cream, and salt to taste. Mash until smooth and creamy. Adjust seasoning if needed.
  6. Slice ribeye against the grain. Drizzle extra browned butter over the steak and serve alongside garlic mashed potatoes. Garnish with fresh thyme.

Use medium heat to brown butter to avoid burning; watch closely for nutty aroma. Let steak rest after cooking to retain juices. Do not overmix mashed potatoes to avoid gummy texture. Roasted garlic adds depth and sweetness to mashed potatoes. For dairy-free, substitute butter with plant-based margarine and heavy cream with coconut cream.
