A creamy, spicy buffalo chicken dip with tangy blue cheese crumbles, perfect for game day or casual get-togethers. Easy to prepare and packed with flavor.

Ingredients

Scale
  • 2 cups cooked shredded chicken (rotisserie recommended)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup blue cheese crumbles
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • Chopped green onions (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine softened cream cheese and sour cream. Blend with electric mixer or whisk until smooth and creamy, about 2-3 minutes.
  3. Add buffalo hot sauce, garlic powder, onion powder, salt, and pepper. Mix until evenly incorporated.
  4. Fold in shredded chicken and shredded cheddar cheese gently, coating the chicken without drowning it in sauce.
  5. Transfer mixture to a 9×9-inch baking dish and spread evenly.
  6. Sprinkle blue cheese crumbles evenly over the top.
  7. Bake for 20-25 minutes until bubbly around edges and golden on top.
  8. Remove from oven and let rest for 5 minutes to thicken.
  9. Garnish with chopped green onions if desired and serve warm with chips, veggies, or toasted bread.

Notes

Soften cream cheese well before mixing to avoid lumps. Shred chicken finely for better texture. Avoid overbaking to keep dip creamy. Prep the dip the night before and refrigerate to save time. Let dip rest after baking to thicken for easier dipping. For dairy-free version, substitute cream cheese and sour cream with coconut-based alternatives and use vegan cheese crumbles. For low-carb, serve with celery sticks or pork rinds instead of chips.
