A quick and easy savory cheesy beef and bean dip that combines seasoned ground beef, creamy refried beans, and melted cheddar cheese for a crowd-pleasing party snack.

  • 1 pound (450g) ground beef (85% lean)
  • 1 can (15 oz / 425g) refried beans (low-sodium recommended)
  • 1 ½ cups (150g) shredded cheddar cheese
  • 1 can (4 oz / 115g) diced green chilies
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional toppings: sliced jalapeños, chopped cilantro, diced tomatoes, sour cream

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in your skillet over medium heat. When shimmering, add finely chopped onion and sauté for 3-4 minutes until translucent and fragrant.
  3. Add minced garlic and cook for another 30 seconds, being careful not to burn it.
  4. Add the ground beef to the skillet. Break it up with your spatula and cook until browned with no pink remaining, about 6–8 minutes. Drain excess fat if necessary.
  5. Season the beef with ground cumin, chili powder, salt, and pepper. Stir well and cook for another minute to bloom the spices.
  6. Stir in the diced green chilies and refried beans. Mix until evenly combined and warmed through, about 2–3 minutes.
  7. Transfer the mixture to an oven-safe baking dish, spreading it evenly.
  8. Sprinkle shredded cheddar cheese generously over the beef and bean mixture.
  9. Bake in the preheated oven for 15–20 minutes, until cheese is melted, bubbly, and starting to brown at the edges.
  10. Remove from oven and let cool slightly for 5 minutes.
  11. Top with your favorite toppings like sliced jalapeños, chopped cilantro, or a dollop of sour cream if desired.
  12. Serve warm with tortilla chips, crackers, or fresh veggies for dipping.

Notes

If cheese browns too quickly, tent loosely with foil halfway through baking. Add a splash of water or broth before baking if dip looks dry. Drain fat from beef to avoid greasy dip. Use sharp cheddar for best flavor and melting. Can substitute ground turkey for beef or vegan cheese for dairy-free version.
