  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Pinch of sugar (optional)
  • 1/4 cup water

Instructions

  1. Mince the garlic and finely chop the onion. If using fresh tomatoes, blanch, peel, and chop them.
  2. Heat 2 tablespoons of olive oil in a medium saucepan over medium heat. Add the garlic and onion, and sauté until fragrant and translucent, about 3-4 minutes.
  3. Stir in the canned tomatoes (or fresh tomatoes if using) and tomato paste. Break up the tomatoes with a wooden spoon as you stir.
  4. Add dried oregano, basil, red pepper flakes (if using), salt, and black pepper. Mix well to combine.
  5. Reduce the heat to low and let the sauce simmer uncovered for 20-25 minutes, stirring occasionally. If the sauce starts to splatter, cover it partially with a lid.
  6. If the sauce is too thick, add a splash of water until you reach your desired consistency.
  7. Taste the sauce and adjust the seasoning. Add a pinch of sugar if needed to balance the acidity of the tomatoes.
  8. For a smooth sauce, use an immersion blender or transfer the sauce to a blender. Blend until smooth.
  9. Let the sauce cool slightly before using. Store leftovers in an airtight container in the refrigerator or freezer.
