  • 1 pound (450g) carrots, peeled and cut into uniform sticks or rounds
  • 2 tablespoons honey (mild-flavored like clover or wildflower)
  • 2 teaspoons fresh thyme, finely chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter, softened
  • 1 clove garlic, minced (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Peel about 1 pound (450g) of carrots and cut them into evenly sized sticks or rounds, roughly 2-3 inches long.
  2. Place a large skillet over medium heat and add 1 tablespoon olive oil and 1 tablespoon unsalted butter. Let the butter melt completely, swirling to coat the pan.
  3. Toss in 1 minced clove of garlic and stir for about 30 seconds until fragrant, being careful not to let it brown.
  4. Add the carrots in a single layer and cook undisturbed for about 4-5 minutes to caramelize one side. Stir and continue cooking for another 5 minutes until tender but still slightly firm.
  5. Lower the heat to medium-low. Drizzle 2 tablespoons honey evenly over the carrots and sprinkle 2 teaspoons fresh thyme. Stir gently to coat all pieces and cook for 2-3 minutes until the honey bubbles and thickens.
  6. Season with salt and freshly ground black pepper to taste. If using, add 1 teaspoon fresh lemon juice and stir to combine.
  7. Continue cooking for another 1-2 minutes to let the glaze cling to the carrots without burning. Remove from heat.
  8. Serve warm immediately.

Notes

Keep an eye on the honey glaze in the last few minutes to prevent burning. If it thickens too fast, lower the heat or add a splash of water to loosen it. For a vegan version, substitute butter with coconut oil and honey with maple syrup or agave.
