  • 2 ¼ teaspoons (1 packet) active dry yeast
  • 1 ½ cups (355 ml) warm water (about 110°F/43°C)
  • 1 tablespoon granulated sugar

  • ½ cup baking soda (for boiling bath)
  • 4 tablespoons unsalted butter, melted
  • 8 hot dogs or sausages (beef, pork, or plant-based)
  • Coarse sea salt for sprinkling
  • 2 cups (200 g) shredded sharp cheddar cheese
  • ¾ cup (180 ml) beer (lager or ale)
  • 4 ounces (115 g) cream cheese, softened
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Freshly ground black pepper, to taste

Instructions

  1. Activate the yeast by combining warm water, sugar, and yeast in a large bowl. Let sit for 5-10 minutes until foamy.
  2. Add flour and 1 teaspoon salt to the yeast mixture. Knead by hand or with a stand mixer for 8-10 minutes until smooth and elastic.
  3. Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 45-60 minutes until doubled in size.
  4. Preheat oven to 425°F (220°C). Bring 10 cups water and baking soda to a rolling boil in a large pot.
  5. Punch down dough and divide into 8 equal pieces. Roll each into a 10-inch rope and wrap tightly around each hot dog, sealing ends.
  6. Dip each pretzel dog into boiling baking soda bath for 20-30 seconds using a slotted spoon. Place on prepared baking sheet.
  7. Brush pretzel dogs with melted butter and sprinkle with coarse sea salt.
  8. Bake for 12-15 minutes until deep golden brown.
  9. While baking, prepare the beer cheese dip by combining beer, cream cheese, garlic powder, onion powder, Dijon mustard, and Worcestershire sauce in a saucepan over medium heat. Stir until smooth and warm, do not boil.
  10. Gradually whisk in shredded cheddar cheese until melted and creamy. Season with black pepper to taste. Keep warm.
