Ingredients

Scale
  • 1 cup (240 ml) refried beans, canned or homemade
  • 1 cup (240 ml) sour cream, full-fat preferred
  • 4 ounces (115 g) cream cheese, softened
  • 1 tablespoon (15 g) taco seasoning
  • 1 cup (100 g) shredded sharp cheddar and Monterey Jack cheese blend
  • 1 cup (150 g) fresh tomatoes, diced
  • 3 green onions, finely sliced
  • 1/2 cup (75 g) black olives, sliced (optional)
  • 1 medium ripe avocado, diced or mashed
  • 1 cup (30 g) fresh lettuce, shredded (iceberg or romaine)
  • A handful fresh cilantro, chopped (optional)

Instructions

  1. In a medium bowl, combine sour cream, softened cream cheese, and taco seasoning. Mix until smooth and well combined (about 5 minutes).
  2. Evenly spread refried beans into the bottom of a 9×9-inch (23×23 cm) glass dish. Smooth out with the back of a spoon (2 minutes).
  3. Carefully spoon the sour cream mixture over the beans and spread gently without mixing the layers (3 minutes).
  4. Evenly distribute shredded sharp cheddar and Monterey Jack cheese blend over the creamy layer (2 minutes).
  5. Layer diced fresh tomatoes, sliced green onions, sliced black olives, and shredded lettuce on top (5 minutes).
  6. Scatter diced ripe avocado and chopped cilantro across the top (3 minutes).
  7. Cover the dish with plastic wrap and refrigerate for at least 30 minutes to let flavors meld and layers firm up (30 minutes).

Notes

Use full-fat dairy for creaminess. Warm refried beans slightly for easier spreading but do not overheat. Chill dip for at least 30 minutes before serving for best flavor and texture. For dairy-free versions, substitute sour cream and cream cheese with dairy-free alternatives and use vegan cheese or omit cheese. Refried beans can be swapped with mashed black beans or mashed cauliflower for low-carb options.
