A creamy, spicy buffalo chicken dip cooked in a slow cooker and topped with a tangy ranch drizzle, perfect for parties and game days.

Ingredients

Scale
  • 3 cups (450 grams) cooked shredded chicken (rotisserie chicken recommended)
  • 8 oz (225 grams) cream cheese, softened
  • 1/2 cup (120 ml) buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/3 cup (80 ml) ranch dressing (homemade or store-bought)
  • 1 cup (100 grams) shredded cheddar cheese
  • 1/2 cup (50 grams) shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • Chopped green onions or chives (optional, for garnish)

Instructions

  1. Prep your chicken: shred about 3 cups (450 grams) of cooked chicken finely for better dip texture. (10 minutes)
  2. Mix the base: In a mixing bowl, combine 8 oz (225 grams) softened cream cheese, 1/2 cup (120 ml) buffalo wing sauce, 1/3 cup (80 ml) ranch dressing, 1 teaspoon garlic powder, and 1 teaspoon onion powder. Stir until smooth and creamy with no lumps. (5 minutes)
  3. Add chicken and cheese: Fold in the shredded chicken, 1 cup (100 grams) shredded cheddar, and 1/2 cup (50 grams) shredded mozzarella. Mix thoroughly to coat evenly. (5 minutes)
  4. Slow cook: Transfer mixture to slow cooker ceramic insert. Cover and cook on low for 2 hours or on high for 1 hour until hot and bubbly with melted cheese. Avoid opening lid frequently. (1-2 hours)
  5. Final touch: Stir the dip, taste and adjust salt and pepper if needed. Optionally sprinkle more shredded cheese on top and melt with lid off for 5 minutes. (5-10 minutes)
  6. Ranch drizzle: Drizzle additional ranch dressing over the top and garnish with chopped green onions or chives. (2 minutes)
  7. Serve warm: Scoop with tortilla chips, celery sticks, or crackers. Serve immediately.

Notes

If dip thickens when cooled, microwave for 30 seconds and stir to restore texture. Use softened cream cheese for smooth mixing. Choose buffalo sauce heat level to suit taste. Ranch drizzle is essential for flavor contrast. Can prepare mixture a day ahead and refrigerate before slow cooking.
