  • 2 pounds stew beef or chuck roast, cut into bite-sized chunks
  • 1 ½ pounds baby potatoes, halved (red or Yukon Gold)
  • 6 cloves garlic, minced
  • 4 tablespoons unsalted butter, melted
  • 1 cup low-sodium beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add the beef bites and sear them until golden brown on all sides, about 5-7 minutes. Transfer to your slow cooker.
  2. Wash and halve the baby potatoes. Add them to the slow cooker, spreading them evenly around the beef bites.
  3. In a small bowl, combine melted butter, minced garlic, paprika, dried thyme, salt, and pepper. Stir until well blended.
  4. Pour beef broth into the slow cooker, ensuring it covers the bottom to prevent sticking and add moisture for cooking.
  5. Pour the garlic butter mixture over the beef and potatoes, ensuring they’re evenly coated.
  6. Cover and set the slow cooker to low for 6-7 hours or high for 3-4 hours. The beef should be tender, and the potatoes fully cooked.
  7. Sprinkle chopped parsley over the dish before serving for a pop of color and freshness.

Notes

Browning the beef before slow cooking adds extra flavor, but it’s optional. Avoid lifting the lid during cooking to maintain heat and ensure even cooking.
