  • 46 fresh plain or everything bagels
  • 8 ounces (225 grams) thinly sliced smoked salmon, preferably wild-caught
  • 8 ounces (225 grams) full-fat cream cheese, softened
  • 12 tablespoons chopped fresh dill (optional, for cream cheese)
  • 2 tablespoons capers, rinsed
  • 1 small red onion, thinly sliced
  • 1 medium cucumber, sliced into rounds or ribbons
  • Fresh dill and chives, chopped, for garnish
  • 1 lemon, cut into 68 wedges
  • 1 cup halved cherry or grape tomatoes (optional)
  • Small bowl of olives
  • 4 tablespoons softened butter (optional)
  • Fresh ground black pepper, to taste

Instructions

  1. Slice 4-6 fresh bagels in half horizontally. Toast lightly for 2-3 minutes at 375°F (190°C) if desired. Arrange on serving board.
  2. Let 8 ounces of cream cheese sit at room temperature for 15 minutes. Stir in 1-2 tablespoons chopped fresh dill and a pinch of black pepper if using. Transfer to a small bowl and place on the board with a spreader.
  3. Thinly slice one small red onion and one medium cucumber. Arrange in small piles on the board. Use a vegetable peeler for cucumber ribbons if preferred.
  4. Rinse 2 tablespoons capers, halve 1 cup cherry tomatoes, and gather a handful of olives. Place each in separate small bowls on the board.
  5. Fold or roll 8 ounces of smoked salmon slices and place prominently on the board as the centerpiece.
  6. Cut one lemon into 6-8 wedges and scatter around the board for squeezing.
  7. Optionally add 4 tablespoons softened butter in a small bowl and sprinkle freshly chopped chives over cream cheese or salmon.
  8. Sprinkle extra cracked black pepper over salmon and veggies if desired. Add fresh herb sprigs for decoration.
  9. Keep smoked salmon chilled until just before serving. Assemble just before guests arrive for best freshness.
