  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons brown sugar
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • Pinch of salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) brown sugar
  • 2 large eggs
  • ¼ cup (60ml) maple syrup
  • 2 tablespoons (30ml) bourbon
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) milk

Instructions

  1. Preheat oven to 350°F (180°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. Melt 2 tablespoons of unsalted butter in a small saucepan. Add 2 tablespoons of brown sugar and stir until dissolved. Pour the mixture into the prepared pan and spread evenly.
  3. Arrange the sliced pears in a circular pattern over the caramel mixture. Set aside.
  4. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  5. In a large bowl, beat softened butter and brown sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
  6. Mix in maple syrup, bourbon, and vanilla extract.
  7. Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined.
  8. Pour the batter over the pears in the pan, spreading evenly with a spatula.
  9. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes, then invert onto a serving plate. Peel off the parchment paper.
  11. Let the cake cool slightly before slicing and serving.
