These adorable ghost-shaped hand pies are perfect for Halloween parties or cozy fall dessert nights. The flaky crust pairs beautifully with the sweet-tart blueberry filling, and they’re entirely plant-based.

  • 2 1/2 cups all-purpose flour
  • 1/2 cup cold vegan butter or margarine, cubed
  • 1/4 cup ice water
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Plant-based milk (for brushing)
  • Dark chocolate chips or vegan chocolate (for the eyes)

Instructions

  1. In a large mixing bowl, combine the flour and salt. Add the cold vegan butter and use your fingers or a pastry cutter to work it into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, until the dough comes together. Wrap the dough in plastic wrap and chill for at least 30 minutes.
  2. In a small saucepan, combine the blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat, stirring frequently, until the mixture thickens and the blueberries burst (about 5-7 minutes). Remove from heat and let cool completely.
  3. Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Use your ghost-shaped cutter to cut out an even number of shapes.
  4. Place half of the ghost shapes on a parchment-lined baking sheet. Spoon a small amount of the blueberry filling onto the center of each piece, leaving a border around the edges. Top each filled ghost with another piece of dough.
  5. Use a fork to press down the edges of the pies to seal them. Make small slits in the top of each pie to allow steam to escape.
  6. Brush the tops of the pies with plant-based milk for a golden finish. Use chocolate chips or melted vegan chocolate to create ghostly eyes and mouths.
  7. Bake for 20-25 minutes or until the pies are golden brown. Let cool slightly before serving.
