Spooky Vegan Blueberry Ghost Hand Pies

Festive and fun ghost-shaped hand pies with a flaky vegan crust and gooey blueberry filling, perfect for Halloween or cozy fall weekends.

  • 2 1/2 cups (315g) all-purpose flour
  • 1/2 tsp salt
  • 1 cup (226g) vegan butter, chilled and cubed
  • 68 tbsp ice water
  • 2 cups (300g) fresh or frozen blueberries
  • 1/4 cup (50g) sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • Flour for rolling
  • Vegan milk or aquafaba for brushing
  • Optional: granulated sugar for sprinkling

Instructions

  1. In a mixing bowl, whisk together the flour and salt. Add the chilled vegan butter and use a pastry cutter or hands to work it into the flour until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Divide into two discs, wrap in plastic, and chill for at least 30 minutes.
  2. In a saucepan, combine blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat, stirring frequently, until the mixture thickens and bubbles. Remove from heat and let cool completely.
  3. On a lightly floured surface, roll out one disc of dough to about 1/8-inch thick. Cut out ghost shapes using a cutter or knife. Repeat with the second disc of dough until you have an even number of shapes.
  4. Place half of the ghost shapes on a parchment-lined baking sheet. Spoon a small amount of blueberry filling onto the center of each shape, leaving a border. Top with the remaining ghost shapes and press the edges to seal. Use a fork or your fingers to crimp the edges.
  5. Brush the tops with vegan milk or aquafaba, and sprinkle with sugar if desired. Use a knife to cut small eyes and a mouth into each ghost for a spooky look.
  6. Preheat your oven to 375°F (190°C). Bake the hand pies for 20-25 minutes or until the crust is golden and crisp. Let cool slightly before serving.

Notes

Keep your dough cold for a flakier crust. Don’t overfill the pies to avoid leaks, and seal the edges well. Customize the design with different shapes for other occasions.
