Instructions

  1. Peel and pit the avocado. Mash in a small bowl with lime juice, salt, and pepper until smooth but slightly chunky. Add chopped herbs if desired.
  2. Lay out the tortillas flat on a cutting board. If using gluten-free or spinach wraps, ensure they are fresh and pliable.
  3. Divide the avocado spread evenly between the tortillas, spreading a thin layer from edge to edge, leaving a 1/2-inch border.
  4. Layer 3-4 slices of turkey breast on each tortilla, slightly overlapping for even coverage.
  5. Sprinkle shredded cheese (if using) and baby spinach leaves over the turkey. Add any extra veggies such as tomato slices or bell pepper strips.
  6. Starting at one edge, gently roll up each tortilla into a tight log. If loose, wrap in plastic and chill for 10 minutes to set the shape.
