  • 1 tsp garlic powder (optional)
  • 1 tsp onion powder (optional)
  • 1 tbsp Worcestershire sauce
  • 46 cheese slices (cheddar, American, or your favorite)
  • 4 large russet potatoes (about 2 lbs)
  • Vegetable or canola oil, for frying
  • Salt, to taste (for fries)
  • Optional: smoked paprika or garlic powder for fries seasoning
  • Lettuce leaves
  • Tomato slices
  • Pickles
  • Red onion slices
  • Ketchup, mustard, mayonnaise
  • Optional: bacon strips

Instructions

  1. Prep the fries by peeling (optional) and cutting potatoes into 1/4-inch thick sticks. Soak in cold water for at least 30 minutes to remove excess starch.
  2. Drain and pat fries completely dry. Heat oil in a deep fryer or large pot to 325°F. Fry potatoes in batches for 3-4 minutes until soft but not browned. Drain on paper towels.
  3. In a large bowl, combine ground beef, Worcestershire sauce, salt, pepper, garlic powder, and onion powder. Mix gently and divide into 4-6 equal portions. Form patties slightly larger than buns with a small indentation in the center.
  4. Preheat grill to medium-high heat (about 400°F). Clean and oil grates.
  5. Grill patties for 4-5 minutes per side for medium doneness. Add cheese slices in the last minute to melt. Use a thermometer to ensure internal temperature reaches 160°F.
  6. Increase oil temperature to 375°F. Return par-cooked fries to hot oil in batches for 2-3 minutes until golden and crispy. Drain and season immediately with salt and optional spices.
  7. Arrange buns, patties, fries, and toppings on a table for a burger bar. Let everyone assemble their own burgers.

Notes

Do not overwork the meat to keep burgers tender. Press a small indentation in the center of patties to prevent puffing. Double fry fries for best crispiness. Season fries immediately after frying. Let burgers rest a few minutes after grilling to retain juiciness. Patties can be prepared up to 24 hours ahead and refrigerated.
