  • 1 packet taco seasoning (McCormick or Old El Paso)
  • 1/3 cup water
  • 1 large bag (1316 oz) restaurant-style tortilla chips
  • 2 cups shredded Mexican blend cheese (or cheddar and Monterey Jack)
  • 1 cup refried beans (warmed; Rosarita recommended)
  • 1/2 cup pickled jalapeños (drained)
  • 1 cup sour cream (full-fat)
  • 1 cup pico de gallo or salsa
  • 1 avocado (diced)
  • 1/2 cup black olives (sliced)
  • 1/4 cup fresh cilantro (chopped)
  • 1 lime (cut into wedges)

Instructions

  1. Preheat your broiler to high and position the rack about 6 inches from the heat source. Line a large rimmed baking sheet with foil for easy cleanup.
  2. Cook the beef: Heat olive oil in a skillet over medium-high heat. Add ground beef and break it apart with a spatula. Cook for 5-7 minutes until browned and no longer pink. Drain excess fat, then stir in taco seasoning and water. Simmer for 2-3 minutes until thickened. Set aside.
  3. Warm the refried beans: In a small saucepan over low heat, warm the refried beans, stirring occasionally. Add a splash of water if too thick. Set aside.
  4. Layer the chips: Spread tortilla chips in an even layer on the prepared baking sheet, overlapping slightly so every chip gets toppings.
  5. Add the beef and beans: Spoon the seasoned beef evenly over the chips. Dollop warm refried beans in small spoonfuls across the board.
  6. Top with cheese and jalapeños: Sprinkle shredded cheese generously over everything, covering the edges. Scatter pickled jalapeños on top.
  7. Broil for 3-5 minutes: Place the baking sheet under the broiler and watch closely until cheese is bubbly and starting to brown. Rotate the pan halfway through if needed.
  8. Add fresh toppings: Remove from oven and let cool for 1-2 minutes. Dollop sour cream, add pico de gallo, diced avocado, and black olives. Sprinkle with fresh cilantro and arrange lime wedges around the edges.

Notes
