Ingredients

Scale
  • 1 cup (240 ml) warm milk (about 110°F/43°C)
  • 2 ¼ tsp active dry yeast (1 packet)
  • ¾ cup (150 g) granulated sugar
  • 3 large eggs, room temperature
  • 4 cups (480 g) all-purpose flour
  • ½ tsp salt
  • 6 tbsp (85 g) unsalted butter, softened
  • 1 cup (240 ml) heavy cream, chilled
  • ½ cup (60 g) powdered sugar
  • 1 tsp vanilla extract
  • Gel food coloring (red, blue, yellow, green, purple)
  • Optional toppings: sprinkles or edible glitter, powdered sugar for dusting

Instructions

  1. Activate the yeast by pouring 1 cup warm milk into a small bowl, sprinkle 2 ¼ tsp active dry yeast and 1 tbsp sugar over it. Let sit 5–10 minutes until foamy.
  2. In a large bowl or stand mixer, beat 3 eggs with remaining sugar (about 11 tbsp) until smooth. Add yeast mixture, 4 cups flour, and ½ tsp salt. Mix on low speed until combined.
  3. Gradually add 6 tbsp softened butter, kneading continuously until dough is smooth and elastic, about 7–10 minutes.
  4. Place dough in a greased bowl, cover, and let rise in a warm spot for 1 to 1 ½ hours until doubled in size.
  5. While dough rises, whip 1 cup chilled heavy cream until soft peaks form. Gradually add ½ cup powdered sugar and 1 tsp vanilla extract, whip until stiff peaks form.
  6. Divide whipped cream into five bowls and tint each with gel food coloring (red, blue, yellow, green, purple).
  7. Punch down risen dough and roll out on floured surface into a 12×16 inch rectangle.
  8. Spread colored cream in stripes lengthwise across dough, alternating colors. Gently swirl with a knife if desired.
  9. Roll dough tightly from a long edge into a log, pinch seam to seal. Chill roll in fridge for 15 minutes.
  10. Preheat oven to 350°F (175°C). Slice roll into 1-inch thick rounds and place on parchment-lined baking sheet spaced 2 inches apart.
  11. Bake 15–18 minutes until golden and fluffy. Cool 10 minutes before serving. Dust with powdered sugar or add sprinkles if desired.

Notes

Use gel food coloring for vibrant colors without thinning the cream. Chill the roll before slicing to prevent cream from melting. Watch bake time closely to avoid drying out. For gluten-free or dairy-free versions, substitute flour and cream/butter accordingly.
